Food for Thought

Have you ever wondered what the ‘pulses’ were that Daniel and his friends preferred to eat while in the king’s house? Daniel and his friends preferred to eat plant-based foods instead of the heavy meat-based meals of the king. Pulses are defined as the edible seeds of legumes.

There are over 20,000 different species of legumes. All beans are considered legumes. Beans are packed with fiber and protein, they are low in calories, and a great source of vitamins and minerals. Beans are considered one the best sources of plant-based protein and can ward off hunger by making you feel full longer.

The health benefits of beans include improved blood pressure, cholesterol, gut health, heart health, and are excellent in regulating blood sugar. The fiber in legumes helps to slow the absorption of sugar in the bloodstream. By supporting the health of good bacteria in the gut, and with its high fiber content, it has been shown to be protective against colorectal cancer.

Eating raw or undercooked beans can be dangerous to your health. Without getting into the chemistry of what can make legumes toxic, I will just tell you that it is important to cook all beans. You can find recipes for cooking beans online by doing a simple search for the kind of bean you want to cook.

Sprouting is another way to help with the absorption of nutrients and for better digestion. It increases the amount of protein and Vitamin C. It does take longer to prepare, and you can find many recipes online as well from preparing to eat as a side dish or drying, grinding into flour, and using the flour in baking.

Fermentation is another process that takes some time, but it will improve the nutritional quality of the legumes. It creates more healthy bacteria for the gut, creates better digestion, reduces gas, and enhances overall nutritional quality. Again, find recipes online.

No matter how you prepare your beans, be sure to drink plenty of water or other liquid. Sudden increases in fiber can cause unpleasant symptoms like gas, cramps, or bloating, so it is best to increase your intake of beans slowly over a period of time.

The pulses available at the home storage center include beans and wheat. Though most prices have risen in our grocery stores, the prices have remained the same, and very affordable, at the home storage center.
